Does Quick Fields read PDF's

Yes, Quick Fields can generate pages for PDFs and then you can use image processes to read data from them. In the case of PDF fillable forms, Quick Fields can  read data directly from the form.

Which process would that be I am not seeing anything with generate pages as a process. Is it in the settings?

The options for generating pages from PDFs are in the scan engine settings for both Universal Capture and Capture Engine.
