Copying folder structure without documents is possible using theReplicate Entries activity. Options to include sub-folders and not include the documents are all part of the ‘Copy Settings…’  Some of the settings as part of this activity require Laserfiche 8.1 or higher, and others require Laserfiche 8.3 or higher, but you should still be able to accomplish your goal of replicating folders without documents.
